Aubergine with eggs

Another egg dish from the Ottoman cuisine. Originally, aubergines are stewed and roasted for this dish. With a slight change, we prepared this dish by grilling the aubergines, as we do it at home.


2 Burdan Eggs
2 grilled aubergines
1 tablespoon of  butter
1 tablespoon of pine nut  
1 tablespoon of black currant
Rock salt 
Black pepper    


Slice the grilled aubergines. Start roasting the pine nut on butter on a pan. After a few minutes, add the black currants and grilled aubergines and keep roasting. Break Burdan Eggs over the ingredients and when the eggs are cooked at the desired level, serve the dish with black pepper and parsley (optional) . Enjoy...
