This recipe is the sibling of ''mıkla'', however the fact that the egg is boiled -in water-vinegar mixture- makes it much more different. We adapted this recipe of çılbır, which is still known though rare, from the book of Mahmut Nedim bin Tosun named ''Chef'' published in 1898. This book is one of the first published Turkish cookbooks . Its writer Mahmut Nedim bin Tosun is in fact a soldier, after he is sent to the Bulanık town of Muş, he misses the meals prepared by his mother and writes this book  which contains the recipes of these meals as a guide for single soldiers. Let's see how çılbır is prepared...

4 Burdan Eggs
1 cup of yogurt
1 glove of garlic
1 tablespoon of vinegar
4 glasses of water
1 teaspoon of red pepper flakes
1 tablespoon of butter
Rock salt

Put the water into a cooker and add a desired amount of water onto it. When the water starts to boil, add the vinegar and break Burdan Eggs without stirring and leave them to boil for a few minutes. While the eggs boil, smash the garlic with rock salt and then add it into yogurt and stir the yogurt. Take the boiled eggs onto a serving plate with the help of a cullender and add the yogurt. Melt the butter on a small pan and mix it with red pepper and add the sauce you prepared on top of the yoghurt, and your çılbır is ready. Enjoy...
